Choosing Your Wedding Cake Flavor

Every consultation eventually gets to the same question: "but what does it actually taste like?" The design is what stops people at the dessert table, but the flavor is what they're still talking about at the next family gathering.
Start with what you already love
We rarely start from a blank slate. Most couples already know they gravitate toward something bright and citrusy, or something rich and chocolate-forward. That instinct is the best starting point — a wedding cake should taste like you, not like whatever's trending.
Think about the season
A cake that feels perfect for a July garden wedding can feel a little out of place at a cozy November reception. Lighter citrus and berry fillings tend to shine in spring and summer, while spiced, buttery, and caramel notes feel right at home in fall and winter.
Don't be afraid to mix tiers
One of our favorite tricks: each tier doesn't have to match. A vanilla bean tier for the traditionalists at the party, paired with a bolder flavor — salted caramel, raspberry lemon, spiced chai — for the tier that's really yours. Guests get to choose, and you get to have both.
Baking for guests with allergies? Let us know as early as possible — most of our fillings can be adapted, and it's much easier to plan for from the start than to retrofit two weeks out.
